Wilimee is a small family-run vineyard in the Macedon Ranges at 600m altitude, specializing in Chardonnay and Pinot Noir grown on rare Cambrian soil. The winery is Halliday 5-star rated and won the Inaugural Young Gun of Wine 2021 Vignerons Award. They are known for their unique Underwater Pinot Noir, matured for 5 years underwater using a traditional elevage technique.
