This Bendigo pioneer is doing Pinot Noir and Pinot Gris the thoughtful way, with organic and biodynamic certification backing up their non-interventive philosophy. Hand-harvested grapes and higher plant density mean seriously intense, elegant wines that taste like they came from somewhere special, because they did. Their Methode Traditionnelle is a proper hand-crafted sparkler worth seeking out.
