De Salis Wines is a premium handcrafted winery nestled on the northern slopes of Mount Canobolas in Orange, NSW at 1050 meters elevation, led by Head Winemaker Mitch Svenson. The estate produces dry-grown Chardonnay and Pinot Noir using minimalist Old World techniques with wild yeast fermentation, full malolactic conversion, and minimal additives. Ranked 32nd in Australia's Top Wineries 2025, De Salis is celebrated for capturing terroir through a deep respect for nature's rhythms.
